Truffle Pesto Pizza Flatbread

If you’re anything like me, you’re always looking for easy, delicious meals that you can put together quickly and this truffle pesto pizza flatbread fits that description perfectly. This pizza is so easy to put together and makes a warm, delicious cheesy meal that everyone will enjoy.

Trader Joe’s comes out with this truffle dip in the winter and while it’s not my favorite, I like to use it to give certain dishes a subtle truffle flavor and found that it pairs very well with pesto. The version that I cooked up here is so easy to cook up – simply layer on the truffle dip, the pesto, sprinkle on the cheese and sun dried tomatoes and bake until crispy! Some ways that I like to spice up this truffle pesto pizza flatbread are by adding proteins on top; my favorites to add are chicken and sometimes some bacon to give it some added protein. I also like to drizzle a little bit of olive oil to get that extra pizza-y feel to this dish. One of my favorite additions to this flatbread would be adding a few dollops of the Hot Bomba sauce to give it some kick and nice red color (the pesto and Bomba make it feel very festive this time of year). This one is easy to make your own way so feel free to customize it however you want!

Ingredients
  

  • ¼ cup Truffle Dip I used the seasonal Truffle Dip from Trader Joe's.
  • ¼ cup Pesto I used the Vegan Kale pesto from Trader Joe's – one of my favorite pestos!
  • cup Sun-Dried Tomatoes
  • 1 cup Mozzarella Cheese, shredded
  • 1 pizza crust I used the Trader Joe's pizza crust (rectangle shaped)
