This recipe is incredibly simple and only requires a few ingredients! Here’s what you’ll need:
- Puff Pastry
- Mini Brie Bites
- Blackberries
- Honey
- Egg Wash
These delicious and beautiful brie bites only take 20 minutes to cook and even less time to assemble. They are best served warm with a crisp glass of champagne or white wine.

Method
- Preheat your oven to 400°.
- Follow the puff pastry directions for defrosting.
- Cut your puff pastry into little squares (larger than the brie bite circumference). There should be about 1/4" puff pastry bordering the brie once the brie is placed in the center of the square.
- Score the top of each mini brie round making an "x" on top. This will allow the brie to get extra melty while baking. Place each brie round on a pastry square.
- Add 1 blackberry to the center of each brie round on top of the puff pastry.
- Roughy crimp the edges of the puff pastry surrounding the brie. The pastry square will now be a circle.
- Beat your egg with water.
- Brush the edges of the puff pastry with the egg wash.
- Drizzle each brie pastry bite with 1 tsp honey.
- Bake for 15-20 minutes until pastry is golden brown.
- Drizzle some additional honey on top of the baked brie bites and garnish with rosemary if desired.
