Healthy, Creamy Sun-Dried Tomato Ground Turkey Pasta


I’ve been absolutely loving pasta this spring and when I saw this new Cascatelli pasta shape, I knew I had to do something special with it! This healthy, creamy sun-dried tomato ground turkey pasta is one of my all-time favorite pasta dishes. It’s so creamy, flavorful, and sure to be a weekly staple for you all!

Most pasta dishes usually use heavy cream to make them creamy, but this dish uses greek yogurt which I feel is a great substitute and another great source of protein! I added in 1 large tablespoon to mine, but if you want to make it creamier, you can add some more!

I also substituted in bone broth for chicken stock to get a little extra protein in this meal – bone broth has been one of my favorite things to eat/drink recently. It’s so flavorful not only on its own, but in any dishes that I use it in, I highly recommend trying it out!

Healthy, Creamy Sun-Dried Tomato Ground Turkey Pasta

Ingredients
  

  • 1 pound Ground Turkey
  • 1 Shallot
  • 2 cloves Garlic, minced
  • ½ cup Sun-Dried Tomatoes
  • 2 cups Pasta I used the new Cascatelli pasta from TJ's!
  • Salt and Pepper to taste
  • 1 tsp Oregano
  • ½ tsp Red Pepper Flakes
  • 1 handful Spinach, chopped
  • 1 cup Chicken Stock I used Bone Broth for added protein!
  • 1 large tbsp Greek Yogurt
  • ½ cup Parmesan
  • ¼ cup Pasta Water
  • ½ tbsp Butter

Method
 

  1. Boil your water for the pasta and cook according to the package instructions.
  2. Season your turkey with salt, pepper, oregano, and red pepper flakes. Cook your ground turkey on medium high heat until browned all the way through. Set aside.
  3. In the same pan, add in the butter and saute your garlic and shallot until fragrant. This should take about 1-2 minutes. Add in the sun-dried tomatoes. Let this cook for about 2-3 more minutes.
  4. Drop the heat to medium and add in your chicken broth and greek yogurt. Let this cook down for about 2 more minutes.
  5. As your pasta finishes cooking, don't forget to save the ¼ cup pasta water.
  6. Add the ground turkey, pasta, pasta water, parmesan, and spinach back into the pan. Let this cook together for 2 more minutes.
  7. Once it has all come together, plate and top with extra parmesan! Enjoy!
