During the week, I’m always looking for a delicious dinner with veggies packed in. Sometimes I feel like adding a lot of veggies to my meal makes it taste worse, but with this creamy avocado pesto, it’s AMAZING! It’s packed with healthy fats from the avocado, great nutrients from the spinach, and you don’t sacrifice on flavor at all!
Add as little or as much fresh Parmesan to top it off and make it even more tasty. This is also the perfect green pasta to make for St. Patrick’s Day! The sauce keeps in the fridge for a few days without turning brown, so you can pack it in your kids lunch for a festive green Saint Paddy‘s day surprise. Whip it up and let me know what you think!

Creamy Avocado Pesto Pasta

Method
- Cook your pasta according to the directions on the package. Save that ¼ cup of pasta water!
- In a blender add the avocado, basil, spinach, garlic cloves, parmesan, salt, pepper, red pepper flakes, and pasta water and blend until smooth. This is where you can add more pasta warer to get a thinner consistency if desired.
- In a pan, toss your cooked pasta with the blended sauce. Plate this, add extra basil and parmesan to garnish and enjoy!
