I've been on a HUGE pasta kick lately, and with the weather starting to warm up, was craving a delicious, easy lemon pasta recipe. This one checks all those boxes and was one of my favorites. Give it a try and let me know what you think!

Ingredients
  

  • ¼ White Onion, diced
  • 1 tbsp Olive Oil
  • 2 cloves Garlic, minced
  • 1-2 tbsp Butter
  • ½ tsp Red Pepper Flakes
  • Juice of ½ lemon
  • 2-4 oz Heavy Cream
  • 1 cup Fusilli
  • ¼ cup Pasta Water (optional)

Method
 

  1. Boil your water and add the pasta. Cook according to the instructions.
  2. Add the olive oil and butter to a medium heat pan. Sautee the onions and garlic until fragrant. Add the red pepper flakes for an additional 30 seconds.
  3. Pour in your heavy cream (I like to add a little extra – it makes it super creamy) and let this reduce for a couple minutes.
  4. Once reduced, add in the pasta water and again let this simmer for about a minute. This gives the dish that extra shiny look and brings it all together.
  5. Add in your cooked pasta and stir to combine. Top with extra parmesan if you'd like! Enjoy!
