Ingredients
  

  • 1 whole Avocado
  • ½ cup Basil
  • ¼ cup Spinach
  • 3 cloves Garlic
  • ¼ cup Parmesan
  • 1 tsp Salt
  • ½ tsp Pepper
  • ½ tsp Red Pepper Flakes
  • ¼ cup Pasta Water Add more to thin out your sauce if needed!
  • ½ lb Pasta of your choice I used the Pappardelle pasta nests and they were delicious!

Method
 

  1. Cook your pasta according to the directions on the package. Save that ¼ cup of pasta water!
  2. In a blender add the avocado, basil, spinach, garlic cloves, parmesan, salt, pepper, red pepper flakes, and pasta water and blend until smooth. This is where you can add more pasta warer to get a thinner consistency if desired.
  3. In a pan, toss your cooked pasta with the blended sauce. Plate this, add extra basil and parmesan to garnish and enjoy!
