Before everything, I added dollops (about the size of the pancake size I was planning - slightly smaller) of Nutella on parchment paper on a baking tray and stuck this in the freezer.
I added all of my ingredients into a large bowl - so in a large bowl, crack 2 eggs in a bowl and beat them together.
Add your sugar into the egg mixture and beat thoroughly and quickly.
Add in the oil and milk, and stir together until combined.
Slowly sift in your flour and baking power and stir until combined. Mix until there are no more clumps.
In a pan on medium to medium low heat, add in your mixture until it covers your pan and is about ⅔" thick. It is a little tricky to cook these all the way through while not burning on the outside, so keep a close eye! I do not use butter or oil on my pan for these because I feel like they get a better color without it and they tend not to stick on my pans! If you need to add this, feel free!
Once the pancake has cooked on one side about halfway, add in the frozen Nutella dollop and cover it with some extra batter.
Flip the pancake and cook all the way through. Enjoy the fluffiest, most delicious Nutella pancakes you've ever had!
