As I opened my eyes this morning, I knew exactly what I wanted to do – make pancakes. It’s a weekend tradition in my small family – me and my fiancée, and our furry friend Rue – and I love trying out new recipes. Today, I decided to switch things up and make Nutella stuffed pancakes after seeing them on TikTok here’s the video inspo from @archersfood.

I gathered all the ingredients and started to mix the pancake batter. The batter came together quickly and had a smooth, silky texture. I set it aside to rest while I prepped the Nutella by adding dollops to a tray and sticking it in the freezer – I found that freezing it slightly helps it have a better texture once cooked.
One of the key notes is to add a little extra batter on top of the nutella dollop to make sure the Nutella doesn’t leak out! The aroma of warm, chocolatey Nutella filled the kitchen, and my mouth watered with anticipation. I sat down at the table with my fiancée and Rue, and we dug in.

The pancakes were incredible. The outside was crispy and golden brown, while the inside was soft and fluffy. The Nutella was warm and gooey, and the combination of the sweet, creamy chocolate with the light, airy pancake was simply heavenly.

- Before everything, I added dollops (about the size of the pancake size I was planning – slightly smaller) of Nutella on parchment paper on a baking tray and stuck this in the freezer.
- I added all of my ingredients into a large bowl – so in a large bowl, crack 2 eggs in a bowl and beat them together.
- Add your sugar into the egg mixture and beat thoroughly and quickly.
- Add in the oil and milk, and stir together until combined.
- Slowly sift in your flour and baking power and stir until combined. Mix until there are no more clumps.
- In a pan on medium to medium low heat, add in your mixture until it covers your pan and is about ⅔" thick. It is a little tricky to cook these all the way through while not burning on the outside, so keep a close eye! I do not use butter or oil on my pan for these because I feel like they get a better color without it and they tend not to stick on my pans! If you need to add this, feel free!
- Once the pancake has cooked on one side about halfway, add in the frozen Nutella dollop and cover it with some extra batter.
- Flip the pancake and cook all the way through. Enjoy the fluffiest, most delicious Nutella pancakes you've ever had!
