Ingredients
  

Hot Chocolate Cookies
  • 1/2 cup salted butter softened
  • 3/4 cup brown sugar
  • 1/4 cups sugar
  • 1 egg room temperature
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups flour
  • 1/3 cup cocoa powder
  • 1/2 teaspoons baking soda
  • 1/2 cup semi sweet chocolate chips
Hot Chocolate Frosting
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1/2 cup cocoa powder
  • 1 tsp vanilla extract
  • mini marshmallows for topping cookies

Method
 

  1. Start by preheating the oven to 350 degrees and lining a baking sheet with parchment paper. Set it aside for later use.
  2. Combine the butter, brown sugar, and granulated sugar until they form a creamy mixture. Add in the egg, egg yolk, and vanilla extract, mixing until well combined.
  3. Sift in the flour, cocoa powder, and baking soda, and gently blend until the dry ingredients vanish into the mixture.
  4. Carefully fold in the chocolate chips. Use a generous cookie scoop to create 12 equally sized cookie dough balls. Place these on the prepared baking sheet and softly press them down to about ½ inch thick.
  5. Bake the cookies in the preheated oven for 10 minutes. Once done, let the cookies cool on the baking sheet for roughly 10 minutes before transferring them to a cooling rack.
  6. Meanwhile, prepare the frozen hot chocolate frosting.
  7. Using a stand mixer fitted with a whip attachment, beat together the heavy cream, powdered sugar, and cocoa powder until the mixture becomes fluffy and light.
  8. Spread the cooled cookies with the frozen hot chocolate frosting and sprinkle some mini marshmallows on top. Treat yourself to each delicious bite!
