Ingredients
  

Sugar Cookie Bar
  • 1/2 cup salted butter room temperature
  • 1 tbsp cream cheese room temperature
  • 1 cup sugar
  • 1 egg room temperature
  • 1 egg yolk room temperature
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1 cup flour
  • 1/4 tsp baking powder
Frosting
  • 1/2 cup butter room temperature
  • 4 cups powdered sugar
  • 2-3 tbsp heavy cream
  • 1 tsp vanilla
  • 1/2 tsp almond extract
  • 1/2- 1 tsp light pink gel food coloring
  • sprinkles if desired

Method
 

  1. Preheat the oven to 350 degrees and line a 9x9 baking dish with parchment paper.
  2. In a mixing bowl, beat together the butter, cream cheese, sugar until light and creamy.
  3. Add in the egg, egg yolk, and vanilla and almond extract.
  4. Add in the flour, baking powder, and salt and mix on low until just combined.
  5. Add the batter to the prepared baking dish and spread it until it's even.
  6. Bake for 20-25 minutes until edges are slightly golden brown and the center is set.
  7. While the sugar cookie bars cool, make the frosting.
  8. Beat together the butter and powdered sugar. It will be very powdery still.
  9. Add in the heavy cream, vanilla, almond extract, and food coloring until your desired shade of pink is reached.
  10. Once sugar cookies are completely cool, spread the frosting evenly over the bars and top with any sprinkles!
