Crispy Gnocchi Summer Pasta Salad

Ingredients
  

  • 16 oz Gnocchi
  • 1 Summer Squash
  • 1-2 Bell Peppers, thinly sliced into strips
  • 4 links Chicken Sausage
  • ½ Red Onion, diced
  • ¼ cup Basil, chopped
  • ¼ cup Olive Oil
  • 2 tbsp Balsamic Vinegar
  • 1 tsp Salt
  • 1 tsp Pepper
  • 4 cloves Garlic, minced
  • ½ cup Cherry Tomatoes, halved

Method
 

  1. Slice your chicken sausage into ¼" pieces. Brown your pieces on both sides on medium heat.
  2. Bring your pasta water to a boil and boil the gnocchi according to package instructions.
  3. Chop up your onion, tomato, summer squash, and basil and set aside.
  4. On medium heat, crisp up your cooked gnocchi. I used the new TJ's olive oil for this but feel free to use whatever oil/butter you prefer.
  5. To make the dressing, combine the olive oil, balsamic vinegar, garlic, salt, and pepper in a small bowl and stir to combine.
  6. To assemble, use a large bowl and add each ingredient in. Top with your dressing and enjoy!
