I’ve been obsessed with gnocchi recently and I’m always looking for ways to use it! This crispy gnocchi summer pasta salad has been my go to – especially since I’ve been trying to get more veggies into my diet!
Does this crispy gnocchi pasta salad keep well in the fridge?
One note for this pasta salad – I love eating it warm but I actually almost love eating it cold more! Highly recommend letting this one sit in the fridge to cool down before trying it!
Another great thing about this crispy gnocchi pasta salad is it’s super versatile. You can use pretty much any veggies/protein you have in your fridge. I’ve been growing a ton of cherry tomatoes and basil this year, and they go great in this dish!

Method
- Slice your chicken sausage into ¼" pieces. Brown your pieces on both sides on medium heat.
- Bring your pasta water to a boil and boil the gnocchi according to package instructions.
- Chop up your onion, tomato, summer squash, and basil and set aside.
- On medium heat, crisp up your cooked gnocchi. I used the new TJ's olive oil for this but feel free to use whatever oil/butter you prefer.
- To make the dressing, combine the olive oil, balsamic vinegar, garlic, salt, and pepper in a small bowl and stir to combine.
- To assemble, use a large bowl and add each ingredient in. Top with your dressing and enjoy!
