This creamy tomato tortellini soup recipe is my favorite for soup seasonโ€”ready in just 30 minutes, itโ€™s creamy, healthy, and packed with cheesy tortellini and spinach. The cheese filled tortellini is what really makes this soup special! If you have not had Trader Joeโ€™s creamy tomato and red pepper soup yet, run to go try it. It is one of my favorite soups on its own, or used in a recipe like this one.

This soup would be the perfect meal to make on Halloween night before going out for trick or treating. Itโ€™s hearty, nutritious, and incredibly tasty! The whole family will love it and it will quickly be added to your weekly meal rotation.

How long is tortellini soup good for in the fridge?

This soup is not only good for another 3-5 days in the fridge (truth is Iโ€™ve eaten it almost a week after), it is almost better than freshly made! It tastes amazing as leftovers and I highly recommend making more than is needed so that you can enjoy this creamy tomato tortellini soup all week long.

What else could I use for this tortellini soup?

Iโ€™ve seen people use Italian sausage instead of turkey in this recipe, and Iโ€™m sure that would be amazing! People also like to use heavy cream to thicken this soup up and make it extra creamy, but I really like to use greek yogurt for the added protein! For garnishes, I really like to top this with parmesan cheese, and I think fresh basil would go incredibly well with this easy weeknight meal as well.

Ingredients

  • 1 lb ground turkey
  • 1 tsp dried oregano
  • 1 tsp black pepper
  • 1 tsp salt
  • 1/2 white onion diced
  • 3 cloves garlic minced
  • 1 carton TJ's Tomato Red Pepper Soup
  • 1 container cheese tortellini
  • 1/2 cup greek yogurt
  • 1 cup spinach

Method

  1. In a pan over medium high heat, cook the ground turkey. Season with oregano, pepper, and salt.
  2. To the same pan, add the onion and garlic and stir into the meat.
  3. Transfer the meat to a pot, and add in the full carton of soup.
  4. Bring to a boil, add in the tortellini, and cook for 3 minutes.
  5. Reduce to medium heat, stir in the greek yogurt and spinach. Let this simmer for an additional 2 minutes.
  6. Serve with freshly grated parmesan if desired.
