I’m always looking for easy, healthy, delicious weeknight meals and this soup checks all of those boxes! I love wontons and these cilantro mini wontons go so perfectly in this soup and they’re very low calorie so I feel like I could eat as many as I wanted.

I also feel like I can have some problems fitting veggies into my diet, and this soup is a perfect way to pack more veggies into my day. I used zucchini and green onions, but I’ve heard that bok choy goes perfectly in this soup and I even think broccoli could work well! Choose whichever veggies you’d like and throw them in there!

Chicken Cilantro Dumpling Miso Ginger Soup

Ingredients
  

  • 1 Zucchini
  • 4 Green Onions
  • 1 bag Chicken Cilantro Dumplings
  • ½ Carton Miso Ginger Broth
  • 2 tbsp Chili Onion Crunch

Method
 

  1. Chop the zucchini and green onions. Sautee these in a pot on medium heat for 2 minutes.
  2. Add the bag of Chicken Cilantro dumplings to the pot. Cover and cook this mixture for 10 minutes on medium heat. Stir intermittently.
  3. Add the broth and stir to combine. Cover and simmer on low heat for an additional 5 minutes.
  4. Stir in the chili onion crunch to your desired spice level (sometimes I like to add exra to make it super spicy!).
