Dragon Fruit Rice Krispy Treat

If you know me, you know that Rice Krispy Treats are one of my absolute favorite desserts. My base Rice Krispy Treat recipe is my favorite and I thought spicing it up with this crushed-up dragon fruit would be an amazing summer treat!

If you don’t have dragon fruit, you can use dried strawberries or raspberries and it should be just as delicious!

Ingredient Notes

I would definitely use salted butter for these rice krispy treats – it gives it a slightly better flavor than unsalted from my experience.

For the dragon fruit chips, if you like chunks of these, I recommend a rough chop, but if you just want the flavor and the color, I would recommend using a food processor or blender to get more of a powder. I prefer to have pieces so I just chop them up!

I highly recommend using the condensed milk in your Rice Krispy Treats! I love the extra flavor and texture that it brings!

Recipe Tips

I highly recommend using fresh cereal and marshmallows for this recipe. A lot of times, if you use stale cereal or marshmallows, it can mess with the texture on these!

Also, DO NOT press these firmly to the pan when moving from the cooking pan to the baking pan. This will cause them to harden.

Where can I buy dragon fruit?

I got my dragon fruit chips from Thrive Market, but you should be able to find them at most grocery stores. I’ve also bought some on Amazon before!

Dragon Fruit Rice Krispy Treats

Ingredients
  

  • 6 cups Rice Krispies
  • 2 oz Dragon Fruit Chips (save some for topping the treats at the end)
  • 3 tbsp Butter
  • 10 oz Marshmallows (1 bag)
  • ¼ cup Condensed Milk (save some to drizzle on top at the end)

Method
 

  1. Roughly chop your dragon fruit chips. Save these for later.
  2. In a medium pan on medium heat, melt your butter.
  3. Once melted, add in your mashmallows. Drop your heat slightly and cook this mixture until the marshmallows are fully melted.
  4. Once fully melted, add in 2 tablespoons of condensed milk. Stir this in thoroughly.
  5. Pour in the Rice Krispy cereal and mix well.
  6. Grease a baking pan and pour in your mixture. Top with the leftover dragon fruit chips and condensed milk. Eat these fresh or let them sit for an hour to help them take shape. Enjoy!
