I’m always looking for easy, healthy, delicious weeknight meals and this soup checks all of those boxes! I love wontons and these cilantro mini wontons go so perfectly in this soup and they’re very low calorie so I feel like I could eat as many as I wanted.
I also feel like I can have some problems fitting veggies into my diet, and this soup is a perfect way to pack more veggies into my day. I used zucchini and green onions, but I’ve heard that bok choy goes perfectly in this soup and I even think broccoli could work well! Choose whichever veggies you’d like and throw them in there!

- Chop the zucchini and green onions. Sautee these in a pot on medium heat for 2 minutes.
- Add the bag of Chicken Cilantro dumplings to the pot. Cover and cook this mixture for 10 minutes on medium heat. Stir intermittently.
- Add the broth and stir to combine. Cover and simmer on low heat for an additional 5 minutes.
- Stir in the chili onion crunch to your desired spice level (sometimes I like to add exra to make it super spicy!).
