Ingredients
  

  • 1 cup oat flour
  • 1/2 cup rolled oats
  • 4 servings chocolate protein powder
  • 2 tbsp cocoa powder
  • 2 tbsp maple syrup adjust to your desired level of sweetness by adding more if needed
  • 1 tsp vanilla paste or extract
  • 10 drops of peppermint extract 7 for the protein balls and 3 for the melted chocolate
  • 4 tbsp almond milk add 1 tbsp at a time
  • 1 cup semi sweet chocolate chips melted
  • 1 tsp coconut oil

Method
 

  1. In a blender, add the 1 cup of oats and blend until it becomes a flour texture. Pour into a large bowl with the 1/2 cup of rolled oats (not blended).
  2. Add in the protein powder, cocoa powder, maple syrup, vanilla paste or extract, almond milk (1 tbsp at a time until the mixture comes together), and peppermint extract. Stir to combine well. The mixture will be sticky.
  3. Scoop out 2 tbsp sized balls and roll. Set on a parchment paper lined baking sheet and transfer to the fridge for 10 minutes until set. You may have to reshape the balls slightly after they have chilled and can hold their shape better.
  4. Melt the chocolate and coconut oil in 30 second increments until fully melted. Coat each energy ball with chocolate and set on the parchment paper to set. To speed this up, you can put them back in the fridge.
  5. Dust with a little cocoa powder if desired and enjoy!
