Preheat the oven to 350 degrees and butter and flour a 9x5 loaf pan.
Grate 2 1/4 cups of zucchini, squeezing out the moisture with a cheese cloth.
In a bowl, add the flour, baking soda, baking powder, salt, and cinnamon whisking to combine.
In a separate large bowl, add the brown sugar, white sugar, and oil whisking to combine.
Add in the eggs and vanilla paste whisking to combine.
Sprinkle in the dry ingredients to the wet, folding to combine. Leave some streaks of flour.
Pour in the grated zucchini and mix to combine. The batter with start to get thinner. Stir in the chocolate chips.
In your prepared loaf pan, pour the batter in and bake for 60-70 minutes until a toothpick comes out clean. After 45 minutes of baking, cover the loaf with foil.
Allow to fully cool before slicing and serving.
