Salted Pumpkin Ice Cream with Pumpkin Cookie Crumbles

Ingredients
  

  • 1 can Sweetened, Condensed Milk
  • 2 cups Heavy Whipping Cream
  • tsp Vanilla Extract
  • 1 cup Pumpkin Puree
  • 3 tsp Salt
  • 1 tbsp Pumpkin Pie Seasoning
  • 2 cups Crushed Halloween Joe-Joe's (plus more for topping)

Method
 

  1. Line a medium sized loaf pan with parchment paper.
  2. In a large bowl, crush your pumpkin cookies (save some for topping), and in the same bowl whisk together the sweetened condensed milk, pumpkin, pumpkin pie spice, salt, and vanilla until combined.
  3. Mix the heavy whipping cream on medium-high speed until stiff peaks are formed. I use a stand mixer on medium speed for 2-3 minutes. Slowly fold the whipped cream into the condensed milk mixture.
  4. Pour the mixture into the loaf pan, top with the extra Halloween Joe-Joe crumbles, and let this freeze overnight.
