Potato Fondant Recipe- Melt in your mouth Potatoes

Ingredients
  

  • 3 russet potatoes
  • 2 tbsp olive oil
  • 2 tbsp salted butter
  • 1 1/2 cup chicken stock
  • sea salt to taste
  • rosemary for topping if desired

Method
 

  1. Preheat the oven to 350 degrees.
  2. Wash, peel, and slice the potatoes width wise.
  3. Using a small round cookie cutter, cut each slice into a round potato.
  4. Add the olive oil and butter into an oven safe pan over medium high heat.
  5. Add the potato rounds to the pan and cook each side for 2-3 minutes each until a golden brown crust has formed.
  6. Fill the pan with the chicken stock and bake for 5-7 minutes until fork tender.
  7. Sprinkle on rosemary and enjoy warm!
