Method
- Preheat the oven to 350 degrees.
- Wash, peel, and slice the potatoes width wise.
- Using a small round cookie cutter, cut each slice into a round potato.
- Add the olive oil and butter into an oven safe pan over medium high heat.
- Add the potato rounds to the pan and cook each side for 2-3 minutes each until a golden brown crust has formed.
- Fill the pan with the chicken stock and bake for 5-7 minutes until fork tender.
- Sprinkle on rosemary and enjoy warm!
