Ingredients
  

  • 1/2 cup unsalted butter softened
  • 3/4 cup brown sugar packed
  • 1/4 cup sugar
  • 2 egg yolks room temp
  • 2 tsp vanilla
  • 1/2 cup peanut butter I recommend not using natural
  • 1 cup flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 6 tbsp Strawberry jam

Method
 

  1. In a large bowl, combine the butter, brown sugar, and white sugar. Mix to combine for 3 minutes until light and fluffy.
  2. Add in the peanut butter and mix until combined.
  3. Add in the egg yolks and vanilla and mix to combine.
  4. Add in the flour, baking powder, and salt and mix to combine.
  5. Scoop 2 tbsp sized cookie dough balls onto a non stick cookie sheet. Make little divots in the top and swirl the strawberry jam into the divots. Chill the cookie dough balls for 45 minutes.
  6. Towards the end of the chill time, preheat the oven to 350 degrees.
  7. Bake the cookies for 9-11 minutes until edges are just golden brown. Allow the cookies to fully cool down before transferring to a wire rack. These cookies need time to set after being pulled from the oven. Enjoy with a glass of milk!
