Homemade Marshmallows 101: Essential Tips and Tricks for Success

As the festive season wraps its arms around us, there's a joyous symphony of scents wafting from the kitchen, captivating us with the promise of sweet delights. Picture this: a cozy, bustling kitchen adorned with twinkling lights and laughter swirling amidst the air, accompanied by the unmistakable aroma of vanilla and sugar dancing together in perfect harmony. Amidst this cozy chaos, there's a delightful creation in the making—homemade marshmallows.

Ingredients
  

  • 2 envelopes of gelatin
  • 1/2 cup cold water to bloom gelatin
  • 1/2 cup water for the corn syrup/sugar mixture
  • 1/3 cup corn syrup
  • 1 3/4 cups sugar
  • 1/4 cup powdered sugar sifted for topping

Method
 

  1. In a small bowl add the 1/2 cup cold water and sprinkle the gelatin packets on top. Set aside to bloom.
  2. In a medium pot over medium heat, add the other 1/2 cup water, corn syrup, and sugar. Stir to combine and keep stirring occasionally until this mixture starts bubbling (about 5 minutes).
  3. Turn heat to medium high and allow to cook without touching for another 5 minutes.
  4. Pour this hot mixture into a stainless steel stand mixer bowl.
  5. Allow to sit and cool ever so slightly for 5 minutes.
  6. Add the bloomed gelatin to bowl and mix on low until melted and combined for 1 minute.
  7. Turn the speed up to medium high and mix for about 8-10 minutes until the mixture becomes white and fluffy.
  8. Dump this mixture into a greased baking dish, cover with foil, and refrigerate for 6 hours or overnight.
  9. Once set, remove from baking dish, dust with sifted powdered sugar, cut into cubes and serve on top of hot chocolate!
