Gochujang Glazed Salmon Bowls

Ingredients
  

  • 1 lb Salmon
  • 2 tbsp Gochujang
  • 1 tbsp Honey
  • 1 tbsp Sesame Oil
  • 1 tbsp Soy Sauce
  • Sesame Seeds for topping
  • 2 cups Rice
  • 1 Avocado
  • 1/2 large cucumber sliced thin
  • 1-2 tsp chili crips oil depending on how spicy you want it
  • 1 tsp rice wine vinegar

Method
 

  1. In a small bowl, mix together the gochujang, honey, soy sauce, and sesame oil.
  2. Brush this mixture evenly over each salmon filet. Reserve half of the glaze for later.
  3. If your air fryer requires preheating, preheat it to 400°. Spray the air fryer basket with cooking spray. Add the salmon to the basket 2 inches apart and air fry for 10 minutes. Do not flip halfway since the skin tends to stick to the bottom.
  4. Every couple of minutes, re-brush the glaze on the salmon.
  5. While the salmon cooks, slice your cucumber very thin. Add the chili crisp oil and rice wine vinegar and allow to marinate in the fridge for the remaining cook time of the salmon.
  6. Cook the rice according to package instructions. Slice your avocado.
  7. In a medium bowl, add half of the rice, half the avocado, and the cooked salmon. Sprinkle on sesame seeds, and serve with seaweed or cucumber if desired. Enjoy!
