Easy Slow Cooker Butter Chicken – Rich, Creamy & Flavor-Packed

This slow cooker butter chicken recipe is the easiest way to bring bold, comforting flavor to your dinner table with minimal effort. Made with tender chicken thighs or breasts, warm spices, a rich tomato base, and a swirl of cream and butter, this dish is a weeknight dinner winner and a family favorite you’ll want to make on repeat.

Ingredients
  

  • 2 lbs boneless skinless chicken thighs, cut into bite-sized pieces
  • 1 ½ yellow onions roughly chopped
  • 5 cloves garlic minced
  • 1 tbsp fresh ginger minced
  • 1 20 oz can tomato sauce
  • 1 15 oz can coconut cream or coconut milk can also use heavy cream for a richer sauce
  • 4 tbsp unsalted butter
  • 3 tsp garam masala
  • 1/2 tsp ground cumin
  • 2 tsp ground coriander
  • 2 tsp turmeric powder
  • 2 tsp paprika
  • 1 tsp cayenne pepper
  • 1-2 tsp kosher salt to taste
  • 3 tbsp fresh cilantro plus extra to garnish

Method
 

  1. In a food processor, add the onions, garlic, ginger, garam masala, cumin, ground coriander, turmeric powder, paprika, cayenne pepper, kosher salt and cilantro and pulse until fully smooth.
  2. In a crockpot, add the cubed chicken, onion garlic sauce from the food processor, tomato sauce, butter, and coconut cream and stir to combine.
  3. Cook for 3-4 hours on high or 6-7 hours on low. Serve over a bed of rice with naan and top with fresh cilantro!
