3 Ingredient Cheese Stuffed Potatoes - A Delightful Comfort Food Dish

With just three simple ingredients, this dish combines creamy melted cheese with tender and fluffy boiled potatoes for a mouth-watering meal. Ingredients
  

  • 5 gold medium potatoes
  • 1/4 cup corn starch
  • 1 tbsp sugar
  • 1 cup cheddar cheese cubed
  • seasonings if desired
  • 4 cups vegetable oil for frying
  • chives for topping if desired

Method
 

  1. Bring a pot of 5 cups water to a boil.
  2. Wash, peel, and chop your potatoes into 1 inch cubes.
  3. Boil for 20 minutes until fork tender.
  4. Chop the cheese while the potatoes cook.
  5. Mash the potatoes in a bowl with the corn starch and sugar. You may add any additional seasonings you desire.
  6. Scoop out 3 tbsp of the potato mixture and flatten into a circle. Add a small handful of cheese cubes to the center and wrap the potato dough around the cheese.
  7. In a pan, add the oil and bring up to medium high heat. Shallow fry each cheese stuffed potato for about 2 minutes.
  8. Transfer to a paper towel lined plate to soak up some excess oil.
  9. Top with chives and enjoy!
