1-Pot Creamy Sausage Couscous

Ingredients
  

  • 4 links Chicken Sausage
  • 2 tbsp Olive Oil
  • ½ White Onion, diced
  • 4 cloves Garlic, minced
  • ¼ cup Sun-Dried Tomatoes, chopped
  • 1 cup Couscous
  • cups Chicken Broth (Add more as needed)
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Red Pepper Flakes
  • 1 cup Spinach
  • ¼ cup Greek Yogurt
  • cup Parmesan

Instructions
 

  • Slice your chicken sausage into ¼" pieces. In a pan on medium heat, brown the sausage on both sides. Remove the sausage from the pan and set aside.
  • Add in your onion and garlic to the same pan and cook until fragrant (1-2 minutes).
  • Dice your sun-dried tomatoes and add them to the same pan. Let this cook for an additional minute.
  • Add in the couscous and let this crisp up for another minute.
  • Pour in the chicken broth and bring to a boil. Once the boil starts to happen, bring the pan down to a simmer and cover until fully cooked (should take 10-15 minutes). You can add more or less broth depending on how you like your couscous.
  • Once this is nearly done cooking, add in the spinach, parmesan, and seasonings. Stir until fully combined and the spinach wilted down.
  • Once this has finished cooking, add in your greek yogurt and stir to combine again. You can add more or less depending on how creamy you'd like your dish.
  • Add back in the sausage, top with more parmesan, and enjoy!
