Slice your chicken sausage into ¼" pieces. In a pan on medium heat, brown the sausage on both sides. Remove the sausage from the pan and set aside.
Add in your onion and garlic to the same pan and cook until fragrant (1-2 minutes).
Dice your sun-dried tomatoes and add them to the same pan. Let this cook for an additional minute.
Add in the couscous and let this crisp up for another minute.
Pour in the chicken broth and bring to a boil. Once the boil starts to happen, bring the pan down to a simmer and cover until fully cooked (should take 10-15 minutes). You can add more or less broth depending on how you like your couscous.
Once this is nearly done cooking, add in the spinach, parmesan, and seasonings. Stir until fully combined and the spinach wilted down.
Once this has finished cooking, add in your greek yogurt and stir to combine again. You can add more or less depending on how creamy you'd like your dish.
Add back in the sausage, top with more parmesan, and enjoy!
