1-Pot Creamy Sausage Couscous


These 1-pot meals are some of my favorite meals to whip up and I love creating new versions! This 1-Pot creamy sausage couscous was incredibly delicious and a new variation that I’ll definitely be making again.

If you’ve been following me, you know that I’ve been loving these types of meals. I’ve been loving chicken sausage and couscous recently and so I thought I’d add them to this dish!

I also love how creamy these types of meals are but I don’t think I could eat heavy cream every night of the week! I like using greek yogurt at the end this recipe to make it creamier and give it an extra boost of protein!

Ingredients to make 1-Pot Creamy Sausage Couscous

Here’s what you’ll need for this dish:

  • Chicken Sausage
  • Couscous (I love the Israeli couscous from Trader Joe’s)
  • Onion
  • Garlic
  • Spinach
  • Sun-Dried Tomato
  • Greek Yogurt
  • Chicken Broth
  • Seasonings

If you aren’t a fan of greek yogurt, you can definitely use cream! Also you can sub in pretty much any protein and grain that you like! This is a great meal prep meal that holds its flavor really well in the fridge.

How to make creamy couscous?

The key to making this creamy couscous is being patient while letting the couscous cook and making sure your liquids aren’t overpowering the dish. My rule for cooking most grains is covering the graining with whatever liquid your cooking with, bring it to a boil and as soon as it hits the boil, drop the heat to a simmer and cover until fully cooked. Once it’s fully cooked, I like to add a little parmesan cheese (you can use whatever your favorite cheese is) to make it creamier and give it that lightly nutty flavor.

Ingredients
  

  • 4 links Chicken Sausage
  • 2 tbsp Olive Oil
  • ½ White Onion, diced
  • 4 cloves Garlic, minced
  • ¼ cup Sun-Dried Tomatoes, chopped
  • 1 cup Couscous
  • cups Chicken Broth (Add more as needed)
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Red Pepper Flakes
  • 1 cup Spinach
  • ¼ cup Greek Yogurt
  • cup Parmesan

Method
 

  1. Slice your chicken sausage into ¼" pieces. In a pan on medium heat, brown the sausage on both sides. Remove the sausage from the pan and set aside.
  2. Add in your onion and garlic to the same pan and cook until fragrant (1-2 minutes).
  3. Dice your sun-dried tomatoes and add them to the same pan. Let this cook for an additional minute.
  4. Add in the couscous and let this crisp up for another minute.
  5. Pour in the chicken broth and bring to a boil. Once the boil starts to happen, bring the pan down to a simmer and cover until fully cooked (should take 10-15 minutes). You can add more or less broth depending on how you like your couscous.
  6. Once this is nearly done cooking, add in the spinach, parmesan, and seasonings. Stir until fully combined and the spinach wilted down.
  7. Once this has finished cooking, add in your greek yogurt and stir to combine again. You can add more or less depending on how creamy you'd like your dish.
  8. Add back in the sausage, top with more parmesan, and enjoy!
