Healthy, Creamy Sun-Dried Tomato Ground Turkey Pasta

Ingredients
  

  • 1 pound Ground Turkey
  • 1 Shallot
  • 2 cloves Garlic, minced
  • ½ cup Sun-Dried Tomatoes
  • 2 cups Pasta I used the new Cascatelli pasta from TJ's!
  • Salt and Pepper to taste
  • 1 tsp Oregano
  • ½ tsp Red Pepper Flakes
  • 1 handful Spinach, chopped
  • 1 cup Chicken Stock I used Bone Broth for added protein!
  • 1 large tbsp Greek Yogurt
  • ½ cup Parmesan
  • ¼ cup Pasta Water
  • ½ tbsp Butter

Instructions
 

  • Boil your water for the pasta and cook according to the package instructions.
  • Season your turkey with salt, pepper, oregano, and red pepper flakes. Cook your ground turkey on medium high heat until browned all the way through. Set aside.
  • In the same pan, add in the butter and saute your garlic and shallot until fragrant. This should take about 1-2 minutes. Add in the sun-dried tomatoes. Let this cook for about 2-3 more minutes.
  • Drop the heat to medium and add in your chicken broth and greek yogurt. Let this cook down for about 2 more minutes.
  • As your pasta finishes cooking, don't forget to save the ¼ cup pasta water.
  • Add the ground turkey, pasta, pasta water, parmesan, and spinach back into the pan. Let this cook together for 2 more minutes.
  • Once it has all come together, plate and top with extra parmesan! Enjoy!
