Boil your water for the pasta and cook according to the package instructions.
Season your turkey with salt, pepper, oregano, and red pepper flakes. Cook your ground turkey on medium high heat until browned all the way through. Set aside.
In the same pan, add in the butter and saute your garlic and shallot until fragrant. This should take about 1-2 minutes. Add in the sun-dried tomatoes. Let this cook for about 2-3 more minutes.
Drop the heat to medium and add in your chicken broth and greek yogurt. Let this cook down for about 2 more minutes.
As your pasta finishes cooking, don't forget to save the ¼ cup pasta water.
Add the ground turkey, pasta, pasta water, parmesan, and spinach back into the pan. Let this cook together for 2 more minutes.
Once it has all come together, plate and top with extra parmesan! Enjoy!
