
Mediterranean Salad
After the Mediterranean diet was once again named the best diet for health, I decided to add more Mediterranean inspired meals into my weekly menu. This quick and easy salad, is packed with nutrients and flavor! Add some chicken or serve by itself and you have the perfect summer lunch!
Ingredients
Method
- Diced your cucumber, red onion and tomato. Add to a large mixing bowl.
- Add in the crumbled feta on top of the veggies.
- In a separate smaller boql, to create the dressing – mix together olive, oil, lemon juice, salt, pepper, and oregano. Whisk the dressing until combined.
- Pour the dressing over the vegetables in a large serving bowl. Toss to combine and serve with your choice of protein!
