If you’re anything like me and absolutely love Creme Brulee, but find it intimidating to make or don’t want to use a blow torch, this easy 3 ingredient Creme Brulee recipe is for you! I absolutely loved my last creme brulee recipe and was dying to try it again with a spin on the classic flavor! Since TJ’s just came out with their new lemon ice cream, I figured this was a great opportunity to recreate it with a sweet lemon twist just in time for summer.
This easy lemon creme brulee is so simple to put together and doesn’t require a blow torch (which is great since I don’t think many people have blow torches for their kitchen!) and really does taste just as good as a normal creme brulee would. I always am doubting that it will and then it does – I’m shocked at how well using the ice cream as a substitute works!
Easter is just around the corner and I think these easy little lemon creme brulees would be a great dessert for the holiday!
Tip: Make sure to leave enough time to let these sit in the fridge. If you are a little pressed for time, you can throw them in the freezer so they cool a little quicker! If they are not set all the way, the warm sugar will slightly melt the middle which isn’t the worst thing, but always good to avoid! Also, if you have leftover sugar in your pot that has hardened, you can add water and re-boil that mixture to help get it out and clean the pot!

- Melt 3 scoops of the lemon ice cream.
- Add your egg yolks into the melted ice cream – whisk until fully combined.
- Pour equal amounts of the mixture into each of your ramekins. Place these ramekins on a oven-safe dish and fill the dish with your water.
- Bake these for 35 minutes at 325°. Once done baking, let them chill in the frige for 2 hours.
- For the topping, add your sugar into a pot and add water until the sugar is dissolved. Heat this mixture on medium-high heat until it starts to brown. As soon as it turns brown, remove it from the heat and top your creme brulee. Spread the mixture around to create a thin coating.
