Creamy Salmon and Asparagus Boursin Summer Pasta

Boursin Pasta has been my go to lunch this summer and I love trying out new ways to make it! This lemon, salmon boursin pasta is a wonderful variation and one that I’ll be having all summer long.

If you’re a fan of fresh, bright flavors and pasta, this dish will definitely be for you!

If you can’t find Boursin cheese anywhere, I think this dish would work really well with other cheeses! Goat cheese, feta cheese, and other cheeses like that would be a great fit with this pasta?

Does Boursin Pasta dish keep well?

These types of pasta dish also keep in the fridge really well. I almost like them better the next day since they have some time to really mix and marinate together.

Creamy Salmon and Asparagus Boursin Summer Pasta

Ingredients
  

  • 1-2 Salmon Filets I used 1 salmon filet but if you want more, feel free to add it!
  • 6-8 oz Pasta I used the Cascatelli again in this recipe – I love that pasta shape!
  • 1 Shallot & Chive Boursin round
  • 8 oz Asparagus
  • 1 tsp Paprika
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Olive Oil
  • ½ Lemon, juiced

Method
 

  1. Boil your pasta water and cook your pasta according to the package instructions. Be sure to save ¼ cup of pasta water. Preheat your oven to 400°.
  2. Cook your salmon until 145° internal. I sauteed my salmon on the stove on medium-high heat for 2 minutes on each side and then air fried it for 10 minutes at 350°.
  3. To assemble your dish, add the Boursin to the center of a medium sized baking dish. Chop your asparagus into bite sized pieces and surround the Boursin in the dish with your asparagus. Top this with your seasonings and olive oil.
  4. Bake this dish at 400° for 20 minutes.
  5. Once fully cooked, add in your pasta, pasta water, salmon and top with lemon juice! Mix this all together and enjoy!
