Peppermint Cookies and Cream Ice Cream

My favorite thing to do was watch holiday hallmark movies with my family with a big bowl of peppermint ice cream and hot fudge by the glow of the Christmas tree lights. Making homemade ice cream is not only easy, it is incredibly delicious and tastes better than store bought! Peppermint Cookies and Cream ice cream is the perfect treat for the holiday season. This delicious ice cream combines the refreshing flavor of peppermint with the rich taste of chocolate cookies. It's the perfect way to cool off after a day of holiday shopping or enjoying a winter wonderland.

Ingredients

  • 1 can Sweetened Condensed Milk
  • 2 cups Heavy Whipping Cream
  • 1 cup Peppermint Chocolate Cookies crushed (I used TJ's Candy Cane Joe-Joe's)
  • 1 tsp Vanilla Extract
  • 5 drops Peppermint Extract
  • 5 drops Red Food Coloring, if desired for half the ice cream

Method

  1. In a large bowl, crush your chocolate peppermint cookies (save some for topping), and in the same bowl whisk together the sweetened condensed milk, vanilla, and peppermint until combined.
  2. Mix the heavy whipping cream on medium-high speed until stiff peaks are formed. I use a stand mixer on medium speed for 2-3 minutes. Slowly fold the whipped cream into the condensed milk mixture.
  3. If desired, divide the ice cream mixture in half and add the red food coloring to half the mixture to turn it a wintery peppermint color. Leave the other half white.
  4. Pour the mixture into the loaf pan, top with the extra cookie crumbles, and let this freeze overnight.
